My fiance and I just purchased a home and we'd like to re-do the downstairs bathroom. It has what seems to be fake brick, made of plastic I believe, on the walls. Is it better to just paint over the fake brick, or remove it and replace with drywall? Thanks!

You may get lucky and the fake brick may come off of the wall with minimal damage, then you could smooth the wall surface and paint. Depending on the wall construction, removing and replacing it with drywall can turn into a major project. A bathroom remod can cost several thousand dollars. A cosmetic job may be the way to go, if you end up not liking it you can tear into a more expensive remod at a later date.
